For 12 cookies, you will need:
- 225g self-raising flour
- 125g butter, softened
- 100g light brown soft sugar
- 125g caster sugar
- 1 tsp vanilla extract
- 1 egg, lightly beaten
- ½ tsp salt
For the flavoring:
- 1 tablespoon lemon juice
- 1 teaspoon freshly grated lemon zest
Preheat the oven to 180°C, gas mark 4
In a large bowl, sift together flour, salt, lemon juice and lemon zest.
