Cabernet Sauvignon is a great red grape of the Bordeaux region internationally recognized for its quality and acreage. It finds a prominent place in Delices and Gourmandises cellar among other Bordeaux wines.
The companion of Merlot within Delices and Gourmandises’ Bordeaux wines
Created by chance in the southwest of France during the seventeenth century, it comes from crossbreeding of Cabernet Franc and Sauvignon Blanc.
The Cabernet Sauvignon grape variety owes its popularity to its ease of cultivation: the thick skin of the grapes on the vine allows good withstand to frost and rot. It has then spread throughout the world and only lost its position as the first grape grown on the planet in 1990, while being surpassed by Merlot.
Being a wine grape, Cabernet Sauvignon is quite late. It reaches its full maturity over three weeks after Chasselas grapes. If harvested too early, it gives a very tannic wine. Its reputation of varietal aroma of green pepper is actually a sign of low maturity.
When fully ripe, it enhances the wine’s power and structure, while adding complexity with very fruity aromas. Like most Bordeaux presented in Délices et Gourmandises’ catalog, it’s better after aging for few years to strengthen its creaminess and gat a great persistence in the mouth.

Blended with Merlot and Cabernet Franc, Cabernet Sauvignon is present, among others, in the Château Tuilerie Pages and the Château Grand Jean, two wines that will greatly age for at least five years.
Delices and Gourmandises cellars also contains a pure varietal Cabernet Sauvignon, called Les Estampilles and produced in Languedoc-Roussillon in southern France.
